Creamy Avocado Pasta
A 15-minute, plant-based pasta dish that’s rich, creamy, and surprisingly healthy.

Boil pasta
according to package instructions. Reserve 1/4 cup of pasta water before draining.
Make the sauce:
In a blender or food processor, combine avocado, garlic, lemon juice, olive oil, basil/parsley, nutritional yeast (if using), salt, and pepper. Blend until smooth.
Toss pasta
with the avocado sauce, adding a little pasta water to reach your desired consistency.
Garnish
with cherry tomatoes, extra herbs, or chili flakes if desired.
Serve immediately
for best texture and flavor.
