One-Pan Lemon Herb Chicken & Veggies
A quick, healthy dinner bursting with flavor – all in one pan.

Preheat the oven
to 200°C (400°F).
Make the marinade:
In a small bowl, mix olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper.
Prepare the chicken:
Place chicken breasts in a bowl or ziplock bag and pour half the marinade over them. Let sit while prepping the veggies.
Toss the veggies
with the remaining marinade and arrange them on a baking sheet.
Add the chicken
to the sheet pan alongside the veggies.
Bake
for 25 minutes or until the chicken reaches an internal temp of 74°C (165°F).
Serve
hot, garnished with fresh herbs if desired.

• 1 red bell pepper, sliced
• 1 cup cherry tomatoes
• 2 tbsp olive oil
• 1 tbsp lemon juice
